400g penne pasta
2tbsp (20g) butter or low-fat spread suitable for frying, eg. Clover Lighter
2 garlic cloves, crushed
500g vine cherry tomatoes, quartered

1. Bring a large pan of salted water to the boil.
2. Add the penne and cook until al dente, around 10 minutes.
3. Meanwhile, mix together the garlic, anchovy and olive oil into a paste.
4. Drain the cooked pasta and transfer to a large bowl. Toss with the garlic paste, chopped olives and goat’s cheese. Season with freshly ground pepper. (more…)

Frozen lobster tails tend to be rather tough when cooked too long. The timing given in this Italian recipe is for 6 oz. tails. If you are using smaller lobster tails, reduce cooking time to 1 minute. When slicing, the lobster meat should still be slightly raw in the center. The addition of sun-dried tomatoes will give this Northern Italian recipe sauce a very pale pink appearance.
